Summary
From Wiki Farming, the free agriculture encyclopedia
- Description: Early stages of veraison of Pinot noir in late August in the Eola-Amity Hills area of Oregon. Pinot noir grapes in the early stages of veraison. As the grapes ripen, the concentration of phenolic compounds like anthocyanins replaces the green color of chlorophyll in the grape berries which makes them black instead. The concentration of sugars builds up and the concentration of acids decreases, partly due to dilution and partly due to consumption in the process of plant respiration.
